Large salmon, avocado & lemon croissants

- Preheat the oven to 180 °C (fan oven).
- Pop the can open and roll the croissants according to the instructions on the packaging. Beat the egg and brush the croissants with it. Bake in the oven for 12–15 minutes.
- In a bowl, mix the cream cheese until smooth and creamy together with the chopped chives.
- Cut the avocados lengthwise in half and remove the pit. Scoop the avocado flesh from the skin using a spoon and slice it.
- Cut the croissants open and spread the bottom half with the cream cheese. Top each croissant with two slices of smoked salmon and half an avocado in slices. Drizzle with lemon juice for a fresh flavor.
