Cinnamon cardamom croissants

- Preheat the oven to 180 °C (fan oven).
- If using green cardamom pods, crush them so the shells open and you can remove the seeds. If you don’t have a mortar and pestle, you can also use ground cardamom.
- Prepare the filling by mixing all the filling ingredients into a smooth mixture.
- Pop the can open and roll out the dough. Cut the dough along the dotted lines and spread the filling over the croissant dough.
- Roll the dough from the wide end towards the tip to form croissants.
- Place the croissants on a baking tray lined with parchment paper and bake for 15 minutes.
- Meanwhile, prepare the syrup. Heat the water and sugar in a small saucepan until the sugar has dissolved and thickened into a sugar syrup.
- As soon as the croissants come out of the oven, brush them immediately with the sugar syrup.
- Sprinkle with extra ground cardamom.
