  1. Preheat the oven to 180 °C (fan oven).
  2. If using green cardamom pods, crush them so the shells open and you can remove the seeds. If you don’t have a mortar and pestle, you can also use ground cardamom.
  3. Prepare the filling by mixing all the filling ingredients into a smooth mixture.
  4. Pop the can open and roll out the dough. Cut the dough along the dotted lines and spread the filling over the croissant dough.
  5. Roll the dough from the wide end towards the tip to form croissants.
  6. Place the croissants on a baking tray lined with parchment paper and bake for 15 minutes.
  7. Meanwhile, prepare the syrup. Heat the water and sugar in a small saucepan until the sugar has dissolved and thickened into a sugar syrup.
  8. As soon as the croissants come out of the oven, brush them immediately with the sugar syrup.
  9. Sprinkle with extra ground cardamom.
